Crusted Honey Mustard Chicken

Ingredients:

2/3 cup lite honey mustard dressing***
1/8 tsp  salt
1/8 tsp black pepper
2 tsp  dill, freshly chopped
2 medium scallions, finely sliced
1 cup corn flake crumbs
1 lb uncooked boneless skinless chicken breasts, four 4 oz pieces

*** I used Bolthouse Yogurt Honey Mustard Dressing....soooooo good!

Instructions:
  1. Preheat oven to 425 degrees.  Coat a shallow pan with cooking spray.
  2. In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.
  3. Place cornflake crumbs in a hallow bowl.  Dip chicken into dressing mixture and then cornflake crumbs.  Place in prepared pan.
  4. Bake until chicken is golden and no longer pink in center, about 15 minutes.
Serving Size: 1 piece of chicken and about 1 1/3 tbsp of dressing per serving
